Tasting Notes:

Generous, smooth and showing great depth of flavour. Notes of Almond, citrus and creamy stone fruits. Flinty minerality and a balanced acid backbone combine to create harmony and a persistent finish.

Technical:

Machine harvested in the cool of the night to retain natural acidity levels. The fruit was de-stemmed and pressed to stainless steel tanks and inoculated with select yeast strains. Fermentation took place with wild yeast in a small number of barrels. Post ferment, the wine was kept on lees for 3 months with stirring to promote a more complex palate before clarification, filtration and bottling.
