Dark red/black with purple hues. Shows sweet rich liquorice, blackberry and cherry aromas. There is a touch of vanilla from well integrated oak along with nutmeg and white pepper which all adds to the complexity and elegance of the wine. The palate is powerful yet refined. There are intense flavours of blackberry and plum, which along with inky choc mint and aniseed fill the mouth. Subtle touches of oak give a cinnamon touch and add another layer of complexity. The wine finishes with wonderful length, lingering sweet fruit and just enough tannin and alcohol to ensure a long future ahead.
Sourced from a small block in Bakers Gully in McLaren Vale. Hand picked fruit was destemmed then crushed before being fermented in stainless steel, small volume fermentors to maintain strong fruit flavor from extended skin contact. Hand plunged twice daily for seven days then transferred into American and French oak barrels for the remainder of ferment then spent 24 months to allow full flavor development prior to barrel selection and bottling with minimal filtration.
