Tasting Notes:

Wild yeast fermentation, whole bunch pressing and the use of French oak all contribute to the development of great complexity, aromas and flavours in this first release Pinot. A pure nose of morello cherry, hints of cinnamon and anise, complemented by fine, even tannins, results in a wine with a delightful fruit driven palate and an earthy finish With a rich fruit character this is a wine that would pair equally well with both a delicate poached salmon dish or a rich, braised duck breast.
