Tasting Notes:

Lifted aromas of mulberry and blackberry with an underlying hint of earth, plum and cedary oak.Intensely flavoured with a wonderful mouth feel and great length. Plum, spice and blackberry feature on the palate whilst the tannins work with the seamlessly integrated cedary oak.

Technical:

The grapes were sourced from a single vineyard in Langhorne Creek which showed the most intense fruit flavours during vintage. The grapes were harvested in the late of the night and early morning then transported to the winery where they were crushed into static fermenters and inoculated with a selected yeast strain. Open fermented on skins then once optimum colour and flavour was extracted the wine was drained and pressed. After malolactic fermentation was complete the wine was racked and filtered before maturation with a mixture of French and American oak.
