Tasting Notes:

Full flavoured with black and blue fruits, violets, olives, plum and oak. Lovely length and structure with flavours of mulberry, blueberry, olive, and chocolate. Bright, lush full flavoured wine which is brilliantly balanced with spice and tannin. Generous and voluptuous depth of oak with silk like finish.

Technical:

The fruit was picked in 3 batches from a vineyard in the Blewitt Springs sub region of McLaren Vale. The parcels were made separately using traditional techniques with open fermentation in stainless steel over a 8 day period then the juice was pressed to tank where we combined free run and pressings. The wine was aged in new French oak for 12 months then racked prior to final blend assemblage. The wine was filtered then bottled under stelvin screw-cap to ensure longevity and to capture the essence of the grape variety and fruit flavours. Made to drink upon release while the fruit flavour is at its most fresh and vibrant although will develop more complexity over time.
