Tasting Notes:

Big round palate dark fruit of blackberry and plum dominant with olive and licorice undertones. Oak spice provides drive and length whilst silky smooth tannins round everything together perfectly.

Technical:

The fruit came from a single vineyard on Bayliss Road in the Tatachilla sub region of the McLaren Vale. The parcels were picked over a week and made separately using open fermentation in stainless steel over a 14 day period then the juice was pressed to tank where we combined free run and pressings. The wine was aged in new French oak for 12 months then racked before the selected components were blended. The wine was filtered, sulphured and then bottled.
