Tasting Notes:

Brilliant medium, green/yellow appearance with typical Adelaide Hills Chardonnay characters on full display, including white peach, mineral, gunsmoke and cream. The palate is medium bodied, and quite soft with balanced acidity ensuring a clean, dry finish. Great with many different foods really – but the match with Chinese style roasted pork belly is lovely.  

Technical:

The 2011 vintage was a challenging one for the Adelaide Hills beginning in late March. Most of South Eastern Australia was affected by a series of rain events, signaling an end to the prolonged drought we had experienced for the previous 4 years or so. It was a matter of getting as much fruit in as possible before it was affected by the rain. The resultant wines are a little lower in alcohol than usual and have a degree of elegance we don’t see often.

The grapes for this wine were hand harvested, transported to the winery, crushed, chilled and pressed as soon as possible prior to the juice being fermented in both French oak barrels and stainless steel temperature controlled tanks for on average 25-30 days. Ageing on lees for approximately 6 months prior to racking added complexity. The wine was stabilised, blended and then filtered prior to bottling.
