The colour is brilliant vibrant pale green. On the nose floral, lemon and lime with blossom aromas followed by crisp apple and quartz. Intensely flavoured lemon and lime characters on the front palate whilst crisp apple, grapefruit and wonderful natural fruit acidity provide the backbone to a beautifully textural mouth feel.
Sourced from a vineyard located in in the cool climate high altitude region of Eden Valley around 500 metres above sea level in the Barossa ranges. The fruit was harvested in the coolest part of the evening and early morning then transported to the winery. After crushing and must chilling, the free run juice was drained and clarified. This juice was fermented between 13 – 14C with wild yeast to enhance flavours. The wine was bottled with a screw cap closure then aged in bottle for 6 months prior to release.
