Tasting Notes:

The nose is delicate with scented peachy, floral characters. The palate is beautifully balanced with fine persistent bubbles, showing concentrated notes of pear and ripe red berry flavours with crisp, refreshing finish.

Technical:

The perfect celebration wine; pretty in pink, bubbly, light and refreshingly crisp. Our Babydoll Sparkling is made from our award-winning Pinot Gris grapes blended with a dash of Merlot to create an attractive Blush colour..

Babydolls are rare sheep, so small they barely reach your knees. Unlike traditional sheep, these happy little helpers are miniature enough to be kept on our vineyard year-round, because they can’t reach the grapes. Our tiny vineyard sheep lessen the need to mow with tractors, reducing our carbon emissions and producing lots of natural fertiliser. Babydoll Wines are dedicated to our woolly workers who reflect our winery’s innovative thinking and commitment to doing things a bit differently.

The Pinot Gris parcels were harvested separately, pressed and cold settled for 72 hours. The clear juice was racked oand each parcel of juice was fermented separately, using selected yeast strains for Pinot Gris to enhance varietal character. A long, cool fermentation took place over four weeks. The parcels were blended with 1.5% Merlot to give the pink hue, then stabilized and filtered prior to bottling.

Fruity and fragrant, the appealing bouquet shows rockmelon, nectarine, orange peel and strawberry aromas, leading to a vibrant palate that is ripe and juicy with smooth texture and a hint of sweetness, finishing long and refreshing.

Very pale pink colour, the bubbles fine and moderately persistent. The nose is soft and gentle with aromas of white stonefruits with a harmonious amalgam of honeysuckle and florals, with a suggestion of red fruits. Dryish to taste and light-medium bodied, the palate has light stonefruit flavours with integrated nuances of honeysuckle and florals. The palate has a rounded core with some presence, and the wine is softly textured with light acidity. The effervescence is integrated, adding a little creaminess. The wine carries to a stonefruit and honied finish with moderate length. This is a light-fruited, dry, sparkling Pinot Gris with a soft, rounded and creamy mouthfeel. Serve as an aperitif and with Asian fare over the next 2 years.
