Tasting Notes:

Dark red with deep purple hues. Sweet blackberry and plum aromas, with complex lashing of coffee and spice. The wine is big and rich with a lot of front palate, mouth filling fruit flavour. The flavours are berry, a touch of white pepper and some spicy oak complexity. This is a rich, powerful wine that should be decanted prior to serving.

Technical:

The grapes were destemmed without crushing, allowing fermentation with a percentage of whole berries, no sulphur was added prior to fermentation. The grapes were then fermented in open top tanks using inoculated yeast. Temperature and time on skins was critical, when the desired level of flavour and tannins were extracted from the skins, the wine was drained off into new hogshead barrels for ferment. Pressings were used in the blend then the wine went into American and French barrels for maturation, 9 months in American oak and 9 months in French oak for a total maturation period of 18 months.
