Deep crimson with purple hues. An engaging nose with fragrant florals, blackberry fruits and cassis, spice undertones. Bright blackberry, blackcurrant and cassis from the Cabernet Sauvignon are complimented by juicy plum fruits and black cherry notes from the Merlot. This classic Bordeaux blend displays perfumed florals, cedar and spiced dark chocolate. Fine, silky tannins with a backbone of acidity creates a powerful wine full of body and finesse.
Cliff Edge Cabernet Merlot is sourced from a selection of blocks across the historic Mount Langi Ghiran vineyard situated in the Grampians region of Victoria. The combination of Langi’s cool climates, old vines and granite soils produces wines with great intensity, purity and finesse. Fermentation method: Small open top fermenters. 100% whole berry. A mixture of plunging and pump-overs were used during fermentation. An average of 2-3 weeks total time on skins. Natural yeasts were used and once ferment was complete the wines were pressed to tank to settle overnight and then transferred to barrels to complete MLF. 18-month barrel maturation in French barriques, 30% new.

It's hard to imagine a more perfectly structured wine. It has both fruit and oak flavour in good measure, too, but the curl of tannin and the deft line of acidity is really quite something. In truth, at this early stage, cedar-like oak seems slightly too heavy, combined as it is with medium-weight (at most) blue and black berried fruits. But time will set things right, and then we'll have a beautiful wine on our hands.
