Tasting Notes:

A complex wine with wonderful red and dark fruit flavours combining with spice, dark chocolate and a hint of coffee. The finish is long and smooth. A beautifully balanced shiraz.

Technical:

The fruit was sourced from four McLaren Vale vineyards ranging in age from 30 to 55 years. Each parcel of fruit was harvested and handled separately. After fermenting on skins for 10 days, the fruit was transferred to a combination of new, second- and third-use French oak barrels, of which 15% were new. It spent 15 months in barrel prior to blending. Production: 10,000 bottles.

The long warm summer produced a good healthy crop and allowed us to harvest at our leisure. Acids, tannins and flavours were very good across most varieties. The Shiraz fruit had excellent structure and flavours.

Like an incense perfume with earthy, smoky, balsamic, sweet and spicy aromas. An intense array of wild blue and black berries, crushed black pepper, blue violets, a whiff of coconut husk and menthol, dark chocolate, sandal wood and polished, new leather. The palate is succulent, fruity, savoury, polished yet has a strong presence. Grainy tannins and a balance and persistency that give this wine an intense drinkability and pleasure. A cheeky spicy finish keeps you alert.
