Tasting Notes:

Deep crimson red to ink. Black fruit, lifted violets, kalamata olives, some spice and earth characters. Polished and rounded the mid palate has considerable weight with black fruit flavours, cassis, violets, olives, spice, game meat, tannin and oak notes. Muscular and powerful in its youth ensuring longevity. Drinking well as an aged release 4 years post vintage and will continue to drink well into the next decade post release to circa 2030 and beyond.

Technical:

The grapes were hand-picked from a small hillside block just outside the township of Clarendon at an elevation of around 350 metres above sea level. We de-stemmed, crushed and transferred the fruit to small 3 tonne fermenters where fermentation takes place on skins for a two-week period and pumped over twice daily. When dry the must was allowed to soak for three days post fermentation maceration to increase tannin integration. We then pressed the wine into 50% new and 50% second fill French oak hogsheads and puncheon barrels. We matured the wine here with minimal topping and Sulphur additions with submerged bung for 36 months. All barrels are evaluated with only the best barrels chosen for final assemblage which in this vintage was only 20 barrels total. We do not fine or filter the wine prior to bottling. The wine is then aged in bottle for another 12 months prior to release.
