Fu Barossa Valley Shiraz 2016
Deep dark black with crimson hues. A hedonistic style which needs time to breathe to show its true character. The fruit characters are blackberry and there is white pepper and some seductive spice. Some age is showing and is evident through the characters of leather saddle, coffee, and chocolate. Powerful fruit flavours are evident thanks in large part to the old vine material used there’s a blanket of tannin and oak which all work together to provide the backbone. Plum, liqueur, leather, earth, coffee and smoked meat all perform back up roles. A perfect balance between oak and fruit has been achieved and these characters appear to have perfectly melted into one another over time due to the use of high-quality oak and minimal Sulphur use. The tannin structure is long and velvety with the wine having an incredibly long finish.

The wine displays complex aromas of blackcurrant, liquorice and choc mint, with hints of mocha. On the palate, the dense velvety texture is complemented by cigar box, black olive notes followed by fine silky tannins from 18 months maturation in French oak barriques.

The Colonial Estate Entrepreneur Barossa Valley Shiraz 2017
Black colour with purple and cherry red flashes. Brilliant cherry and blackberry florals on the nose followed by layers of earth, dark plums and espresso coffee notes. Still quite bright and broody which reflects it will cellar well so suggest decanting well before consumption if drunk early. There is black plum, blackberry, juicy cassis, dried spice and melted dark chocolate notes. The underlying earthy character becomes more apparent when allowed to breathe; this also allows the layers of tannin to become more apparent whilst a slight touch of natural fruit acid and the oak will ensure longevity and development in the bottle.
Purple Hands Wines Barossa Valley Shiraz 2016
Vibrant colour leads to a nose of interesting and enticing aromas of raspberry, milk chocolate, mocha, warm spices with French oak adding hints of vanilla. A plush juicy silky palate with fine tannin adding the textural element, flavours of liquorice and red berries add to the persistent sweet fruited palate.
Tapestry The Vincent McLaren Vale Shiraz 2016
This wine has a deep, complex, brooding nose with aromas of black cherries, blackberries and some regional prune. There are hints of dark cocoa, mace and a woody character similar to mahogany.In the mouth the wine exhibits Shiraz’s typical plush velvety mouthfeel and the tannins on the finish are subtle and long. It is a rich medium bodied wine with good persistence of flavours such as black fruits, rum, raisin and dark chocolate.
Gaelic Cemetery Celtic Farm Clare Valley Shiraz Cabernet Malbec 2015
Deep red in colour, the wine displays ripe dark berries including mulberry and blackcurrant, a little chocolate and a hint of cedary French oak. The palate is quite rich but retains a degree of elegance with its balanced acidity. It also has a good depth of juicy, fleshy dark berry fruit held in check by some fine grained tannins.
Fu Barossa Valley Shiraz 2016
This wine is sourced from a single old vineyard from what we consider one of the finest vineyards in the Barossa Valley. 2016 was one of the standout vintages of the last decade, the ideal vintage, which gave us the benefit of perfectly, ripened fruit. The smooth flow of vintage allowed us to select specific fruit parcels and allowed us to define the wine as much in the vineyard as the winery. These grapes are brought into the winery and crushed into old vats where the fermentation is initiated by “wild” yeasts found on the grape skins. Careful extraction and short post fermentation maceration is followed by soft pressing. The wine is transferred into brand new oak barrels where the malolactic fermentation is completed before racking and maturation for 36 months in barrels where it stayed with no topping or Sulphur addition. A careful assemblage and barrel selection are followed by minimal filtration and bottling.
A wine which will benefit immensely with time in the cellar to settle and develop. It will have a great lifespan of around 15 years plus still.

The Colonial Estate Entrepreneur Barossa Valley Shiraz 2017
The fruit was sourced from an old vineyard in Marananga, which is dry grown and includes a block of vines over 100 years in age. The vines that make up Entrepreneur were pruned severely and received a run of green harvesting finally producing just one and a half tonne to the acre on average. The fruit was basket pressed and fermented in small 1 and 2 tonne fermenters, it was hand plunged three times daily, the wine was matured on lees to maintain the fruit profile and matured in 100% new barrique barrels for 24 months prior to being bottled with minimal filtration.

The site is around 260-280m above sea level with an east west aspect. Soil consists of a shallow red clay top soil over friable red clay with bands of quartz, ironstone and shale. The vineyard was planted in 2000 and is own rooted, clones are heritage and 1654. The vines are spur pruned to 32-36 buds per vine. The mid rows are cultivated to winter active fescue.The Shiraz was -picked on the 14th February 2015. 10% whole clusters were tipped into open fermenters with the balance crushed on top. One open fermenter was seeded with Symphony yeast (Saccharomyces cerevisiae/Kluyveromyces thermotolerans) with the other left until natural yeast fermentation commenced. Temperatures were allowed to reach 28C with hand plunging performed 3 times daily. After 8 days on skins the fruit was basket pressed & transferred into 18% new French oak with the balance into 1 – 4 year old French oak hogsheads to undergo malo-lactic fermentation. After malo-lactic fermentation SO2 was added to the barrels, the wine was then left on lees to mature for 7 months before racking, the wine was then transferred back to the same oak and matured for another 11 months.
Drink now or cellar carefully and enjoy over the next 15 years.

Bakers Gully is one of the coolest sub regions of McLaren Vale and this results in a medium bodied fruit driven style of Shiraz slightly lighter than your typical McLaren Vale Shiraz.
Gaelic Cemetery Celtic Farm Clare Valley Shiraz Cabernet Malbec 2015
The 2015 vintage was ideal in every respect for the Clare Valley. A cool, wet winter was followed by a mild spring and summer delivering very sound fruit to the winery for vinification. The resultant wines are quite delicious. The grapes for this wine were both machine and hand harvested, transported to the winery, crushed into 4 tonne open fermenters, chilled and cold soaked for approx 4-5 days prior to the natural yeasts kicking in and beginning the ferment. Fermentation was completed within 12 days prior to the wine being pressed and run into new and used French 228L barrels for just on 18months.

Medium to full red colour with the faintest tinge of purple. The bouquet is floral, herbal and lightly crushed-leafy, obviously the cabernet showing itself, the palate just slightly sinewy and lean-ish, with some acidity evident and firmness to close. Good wine and worth cellaring a few years
