Pepperjack Barossa Valley Shiraz 2015

Fu Barossa Valley Shiraz 2014
Vibrant dark black ruby core with a bright purple red hue. An overload of aromas, chocolate and licorice spice jump out of the glass, followed by intense dark cherry and blackberry, the backbone is intertwined perfectly oak, whilst white pepper, smoked meat and cedar provide further depth of aroma. The palate in big and bold, there’s rich fruit up front, which leaps from the glass. There is chocolate, black berry and cassis with a great acidity that gives length, which keeps the dense fruit impressively in balance. Dense and mouth filling, the finish goes on and on. A big, bold, chunky style of Barossa Valley Shiraz the way it should be.
A.T. Richardson Wines Chockstone Grampians Shiraz 2015
A deep garnet colour, the Chockstone Shiraz displays an abundance of black and white pepper spices intertwined with a range of rich and ripe berry fruits. Notes of black cherries, cassis, dark chocolate and even hints of smoked meats add rich complexity to a central theme of spiciness. This generously proportioned, medium- to full-bodied wine of soft acidity and refined structure finishes with a surprisingly vibrant tail-end that is both mellow and expressive.
The Colonial Estate Mungo Park Single Vineyard Old Vine Shiraz 2014
Black with purple/crimson red hue. A dense juicy nose with red and black forest fruits, spicy plum,black cherry and pepper. A classic, rich full bodied Barossa Shiraz. No wonder this is considered our “WOW!” wine after the Decanter review it received. The wine has an array of characters with upfront plum, dark chocolate, fennel, cedar and the new French oak providing a hint of vanilla. Sweet Shiraz fruit surrounds a firm tannin backbone whilst a touch of earth and acid provides length, which adds a moorish element that is enticing.
Lindsay Park Barossa Valley Shiraz 2016
Deep inky red with purple flecks. Bouquet of ripe cherries, plum, chocolate and vanilla spice. Generous full to medium bodied Shiraz showing generous ripe dark berry fruits up front, which will mellow with age; there is an interwoven earthy character, which makes it approachable now. Over all a well balanced Shiraz with an array of fresh lively fruit flavours, hints of milk chocolate and fine toasty oak characters that melt into soft grainy tannins.
The Alexander Cameron Limestone Coast Shiraz 2016
Deep dark black with crimson edge. Powerful and opulent fruit-driven, it has ripe black berry characters with hints of chocolate, alcohol and plums. The palate is fleshy, highlighting the high quality fruit used for this wine. Ripe dark berry characters, which will enable this wine to age well, there is black berry up front with notes of licorice, chocolate and alocohol interwoven across the palate with fine tannins lingering on the finish.

The Cavalier McLaren Vale Shiraz is deep & Rich purple in colour. Intense Spice, berry & chocolate aromas with integrated oak notes. Full bodied and bursting with a complex mix of flavours of mocha, vanilla & Intense red berry flavours. Great middle palate sweetness with well integrated American Oak. The finish is long & well balanced with silky soft tannins.
Pepperjack Barossa Valley Shiraz 2015
Pepperjack Barossa Shiraz is a blend of Shiraz parcels sourced from premium vineyards throughout the Barossa. Parcels selected for Pepperjack Barossa Shiraz have bright, rich fruit concentration with a range of flavours from red berries to rich plums and a hint of savoury notes.
The fruit is fermented for up to ten days depending on the parcel of fruit, then aged for 12 months in a mix of American and French Oak. Individual parcels of fruit are matured separately to maximise the blends complexity through a staged selection process. The resultant wine is soft and plush with lots of flavour, balance and a fine tannin structure
Fu Barossa Valley Shiraz 2014
This wine is sourced from a single old vine vineyard from what we consider one of the Barossa Valley’s finest growers. 2014 was another standout vintage despite challenging conditions. It gave us the benefit of perfectly, ripened fruit as we picked on berry flavour ripeness prior to a large rain event. The smooth flow of vintage allowed us to select specific fruit parcels and allowed us to define the wine as much in the vineyard as the winery. These grapes are brought into the winery, and crushed into old vats where the fermentation is initiated by “wild” yeasts found on the grape skins. Careful extraction and short post fermentation maceration is followed by soft pressing. The wine is transferred into brand new oak barrels where the malolactic fermentation is completed before racking and maturation for 36 months in barrels. A careful assemblage and barrel selection is followed by minimal filtration and bottling.
The Colonial Estate Mungo Park Single Vineyard Old Vine Shiraz 2014
Mungo Park is a single vineyard wine sourced from the famed Northern Barossa Valley sub region – the Moppa and near the Kalimna Vineyard, which is the mother vineyard of “Grange”. The vines themselves are up to 80-year-old and they are cropped, using green harvesting, at less than 3.0 tonne to the acre. Grapes were picked at dawn, it receives fermentation, like our top wines, Exile and Émigré, which is conducted in small open top fermenters, followed by malolactic fermentation and ageing in 100 per cent new French oak barrels.

The fruit for this wine was picked over 2 weeks from select blocks offering different flavour profiles ensuring a range of fruit characters and blending options. We crush, de-stem and leave on skins in open top fermenters for 7 days. A slow ferment then occurred at cool temperatures, the wine was pumped over to ensure fruit intensity. Once fermentation was completed the wine was pressed into new and old French and American barrels. The wine spent 12 months in oak maturing then under went final barrel selection prior to bottling with minimal filtration.

The fruit was picked at optimum ripeness and transported to the winery and immediately crushed. Following on from this we fermented the juice on skins for 10-12 days to maximise colour and flavour extraction. The skins were then pressed gently and the pressings pumped back with the free-run juice. The wine was then fermented over a week then allowed to settle and was then racked off lees. The wine under went malolactic fermentation in barrel and then was aged in the same barrels for 12 months. The wine was blended and prepared for bottling with minimal filtration.

10yo vines, machine-harvested, 2-3 days cold soak, open-fermented in small batches with cultured yeast, 1-12 days post-ferment maceration, matured in 10% new American and a mix of used French and American oak for 9 months. Full, deep crimson-purple; exudes class from start to finish with burnished black cherry/berry fruits, spice, pepper and licorice. It is at once elegant, but persistent, and very long in the mouth. French oak and tannins make a snappy salute to the fruit. Great value.

The nose exhibits aromas of ripe blackberry and dark plum followed by some liquorice and confectionary notes. Full bodied and possessing a plump texture the palate delivers rich joosy flavours of ripe blackberry, dark chocolates, liquorice and spice. Soft velvety tannins. Good depth with medium to long aftertaste of blackberry, dark chocolate and spice.

Indeed that vanilla bean oak character makes an immediate statement, even if it’s at odds with the medium weight palate. Oak dominates nose, palate and finish. It’s quality oak, sure, but unmissable. Underneath, the palate has a handy balance to it that is quite attractive, even elegant – a wine of contrasts, right there. At the moment it’s too mono-dimensional for such serious dollars, but I like the charm, and it has the stuffing to ensure a happy future.

Immensely powerful and full-bodied, with more savoury/earthy black fruits, tannins and oak than you might see in a month of Sundays. The back label says 'wait 15 minutes after opening', alternatively wait 15 hours. The wild card is the balance, giving a third option of not opening the bottle for 15 years.
