Vin De Luxe Sparkling Brut Cuvee Nv

We selected Pinot Noir and Chardonnay parcels from a single vineyard from vines with generous canopies that allow the fruit to ripen gently and naturally. The fruit was picked early in the season, pressed and then allowed to settle naturally before being filtered. All juice is fermented cold to retain freshness and delicacy before undergoing secondary fermentation in tank to add complexity. A small amount of the wine was carefully selected then blended together to create this amazingly fresh sparkling. Variety: Pinot Noir Chardonnay

Awesome Premium Regional Shiraz 2015

Shiraz fruit from a Single Vineyard in the Wrattonbully sub region of the Limestone Coast was sourced to produce this wine. The fermentation of this wine was conventional and classic, with the fermenting juice kept “on skins” for just over 9 days to maximise colour and avour extraction. The skins were then pressed gently and the pressings pumped back with the free-run. The wine was then fermented out slowly over 5 days, allowed to settle and then racked off lees. Malolactic fermentation the ensued and the components were pumped directly to barrel. The malolactic ferment then proceeded steadily. The wine was aged in a combination of new, one year old and two year old French oak. The wine was finally blended and prepared for bottling following extended maturation.

Awesome Clare Valley Riesling 2016

Riesling was sourced from a Single Vineyard in the Clare Valley region Australia’s most famous region for producing the variety. Following picking in the cool of the night, the Riesling was rapidly moved to the winery and whole bunch pressed. All pressings were kept separate to ensure maximum softness and to retain the crispness desired in the final wine style. Slow and controlled fermentation followed at about 12-14 degrees C for two weeks. Our winemakers only minimally intervened to produce this outstanding wine.
