Tempus Two Uno Hunter Valley Semillon 2014
Brilliant pale and clear with green hues. Elegant citrus nuances with accentuated lime with a floral like lift that leaps from the glass. Harmoniously balanced, lime and white peach dominate a minerally austere line.
Tempus Two Uno Hunter Valley Shiraz 2016
Developed red berry aromas and black fruits, rich vanilla spice and nuances of Christmas cake. Mouth filling, plum, sour cherry and strawberry preserve with a seamless, velvet like texture that flows to a slightly liquorice like finish.
McGuigan The Philosophy Cabernet Sauvignon Shiraz 2013
The iconic wine displays lifted aromas of Cassis and blackberries with subtle hints of dried herbs. These attractive blackfruits are further reflected in the palate. The Philosophy is a full-bodied wine with great depth and concentration which lingers. This is held together with velvety tannins giving the wine great structure and longevity of upwards of 10 years with careful cellaring.
Tempus Two Uno Hunter Valley Semillon 2014
The Uno Series represents the very best of Hunter Valley winemaking. Luxurious and elegant, wines are only made in exceptional vintages in very small quantities. The fruit was machine harvested off the Bainton vineyard in the Broke parish of the Hunter Valley. Sandy loam over clay, the un-irrigated/dry grown vineyard has planting dating back to 1923, which is the exact block the Uno Semillon is harvest from. Fermentation was carried out at cool temperature in stainless steel to preserve the fruit. Fermentation lasts for 1-2 weeks. Post fermentation the wine was racked off the ferment lees, clarified, filtered and bottled immediately to retain freshness.

The Uno Series represents the very best of Hunter Valley winemaking. Luxurious and elegant, wines are only made in exceptional vintages in very small quantities. The Shiraz grapes were sourced from old vine vineyards across the Hunter, grown on red volcanic soil, resulting in lower yields and greater fruit intensity. The 2016 vintage Uno is referred to lovingly by the winery team as “The Pressings”, a change from a single vineyard Uno, “The Pressings” encompasses the very best parcels from all our vineyards in 2016, but rather than taking the light run off, only the hard pressings from each parcel were used to assemble the 2016 Uno. These hard pressings were rich in colour, tannin and the most concentrated of flavors. After 16 months maturation 100% new American oak, only the top Hogs Heads (300L barrel) were chosen to make up the final wine.
McGuigan The Philosophy Cabernet Sauvignon Shiraz 2013
The fruit for this wine is sourced from Clare Valley, South Australia. The Clare Valley is famous for producing red wines with the distinct power, yet refined elegance. This is due to the regions warm days to aid in optimal ripeness and cool nights which slows the ripening down and assists in creating balance due to natural acid retention.
The Cabernet Fruit is sourced from the seven hills edge of Clare Valley. This area is slightly warmer than the more northern localities which makes it perfect for ripening Shiraz.
The first pressings are fermented in 7 tonne concrete open fermenters with wooden heading down boards. This ancient method of fermentation ensures a gentle leaching of colour and tannin from the skins without over extracting them. Once the fermentation is complete the wine is transferred to new and 12 month old tight grained French oak for 234 months to mature before bottling. The wine is then stored in a temperature controlled warehouse for a further two years to continue to develop before release.

This is an explosive red, all blood-rich berries and thunderous tannin, the sizeable hit of chocolate and toast entirely appropriate given the concentration of the fruit, and the extractive claw of the tannin. If you've already started planning for New Year's Eve 2050, this should just about have settled down by then, Diam permitting."

"Described by McGuigan as its “hero product” and so accordingly it comes with a hero price. No region is named on either the front or back label of the (extremely heavy) bottle, other than simply South Australia. The website mentions the Clare Valley in passing. No other details available but an earlier release was said to have been matured in both French and American oak. It’s wine as an ASIO officer, its identity and upbringing kept deliberately obscured.
The wine. It’s a beast. Substantial, grunty, grainy and persistent. Heroic style, loaded with fruit and oak, pounded with tannin. It’s like an extract from an airport novel, emphasis on the word extract. Everything’s explosive and obvious, the doors aren’t closed they’re slammed, every point is made with a beating of the fist. Chocolate, toast, asphalt, gum leaves, and a roar of tannin. It has the beef, the muscle, the sinew and the bone to live a very, very long life."

"Housed within an extremely heavy bottle, this blend of 55% Cabernet Sauvignon and 45% Shiraz offers heaps of richness and power despite some bottle age. It oozes plump red and black berries, chocolate, vanilla and vague herbal and earth nuances. It's just starting to hint at maturity by showing a little volatility. The palate is all about power although time is beginning to soften things. While the berry fruit is there, it's fading and is wrestling with chunky, drying tannins. Oak influence shows on the finish. This may cellar for another few years, but it's questionable whether the fruit will hold up."
