Bare Necessities Sauvignon Blanc 2020

Harvested at the cool of night earlier in the season than usual due to the drier ripening season. We crushed the fruit quickly to separate the clear juice from the skins. We used specific yeast for Sauvignon Blanc and after a cool fermentation the wine was carefully filtered and bottled as soon as possible to retain all the appealing fruit flavours.

Olssens Of Watervale Clare Valley Riesling 2018

The 2016 vintage in the Watervale sub region of the Clare Valley was perfect for the production of high quality Riesling. Vintage started a little earlier than normal when we felt the fruit had reached its optimum ripeness. The perfect conditions allowed for perfect flavour ripening whilst it was quite dry this enabled the development of the natural fruit acidity. After picking and crushing we used only the free run juice for our Riesling. Fermentation was over a 

couple of weeks – after cold stabilizing/filtering, the wine was bottled to retain all those beautiful fruit flavours and natural grape acidity.

Normans Holbrooks Road Chardonnay 2020

Machine harvested in the cool early hours of the morning from a single vineyard in South Australia’s Riverland region. We crushed, chilled and fermented the juice at controlled temperatures in the cool cellar. Extended lees stirring added a degree of complexity ensuring this wine over delivers in terms of quality and overall structure despite the use of no oak. The wine was bottled after careful filtration to retain the vibrant fruit and depth of varietal flavours.

The Colonial Estate Emissaire Eden Valley Riesling 2017

Grapes were harvested at optimum flavour and acid balance the ripening of the grapes was monitored with regular berry tasting by winemaker and grower. The fruit was harvested in the cool of the night and rapidly transported to the winery. After crushing and must chilling, the free run juice was drained and clarified with minimum skin contact. This juice was then cool fermented between 12 – 15C with selected yeast to enhance the delicate Riesling flavours. The wine was bottled young to retain as much fruit flavour as possible.  A fantastic example of Riesling that will age well for at least 5 years and over time age will enable the develop some ily character.

Berton Vineyards Foundstone Sauvignon Blanc 2020

Drought conditions continued across south Eastern Australia in late 2019 and early 2020, so supplementary water was crucial in maintaining vine health and crop protection. Rain at the start of harvest meant we had to pick slightly earlier than normal, but despite the seasons’ challenges, and lower alcohols, wine quality from the vintage has been excellent. Harvested in the cool of night to retain fresh flavours, the Sauvignon Blanc juice is fermented at temperatures of 14-16°C - the cooler temperatures helped to retain the fresh and light Sauvignon Blanc aromas and flavours. After fermentation the wine was filtered and blended for bottling as quickly as possible to maintain freshness.
