"Since 1993, Yering Station and Devaux Champagne have been making sparkling wine together. The 2013 cuvée is a blend of Chardonnay and Pinot Noir and has spent 5 years on lees before being disgorged, no malolactic fermentation, no skin contact and a mere 5% of reserve wine spent time in oak foudre. A very fine mousse clings to the glass and remains long after pouring. Lemon zest, brioche, almonds, lemon juice, white peach, honeysuckle, nectarines and lightly toasted notes combine into a complex and delicate wine. On the palate, the delicacy continues with nashi pears, nectarines, white peaches and the yeasty tang of a good sourdough white loaf. The finish is as long and complex as you would anticipate with lingering peach blossom, biscuit and clover honey. This is a restrained and impressive sparkling wine. The ripeness is obvious all the way through but is so well balanced with a tight acidity and elegant handling that if you like your bubbles delicate yet complex, give this one a whirl."

"The colour is an aged brown-ish salmon-pink, more copper-coloured than pink, and the bouquet is aged and herbal, bruised apple, quincy, smoky and showing age, with pinot noir dominating. It has some sweetness and a slightly broad palate shape. It's a bit flat and diffuse - on the other hand soft and flavoursome."
