Tasting Notes:

This delicious Shiraz is dark and focused, displaying concentrated notes of dark cherry, plum and red berry. With plum and magnolia on the mid palate, this sleek and layered wine has plush tannins and excellent depth of character.

Technical:

Ripening late in the autumn, the Shiraz vineyard was harvested in the cool of morning and rigorously sorted to ensure pristine grapes were delivered to the winery. The bins of Shiraz were lightly crushed to opener fermenters and directly inoculated to ensure a quick onset of fermentation. A quick start to fermentation, reaching 28 degrees ensured full extraction of colour and tannin before the fermenting must was chilled back to 24 degrees to maintain fruit elegance and vibrancy. After a total of 9 days on skins and at the completion of fermentation the wine was drained and the skins pressed, all being combined into tank for 48 hours of settling. After 48 hours the wine was transferred to French and American oak hogsheads for maturation. After 18 months in oak, individual barrels were graded and selected.
