TASTING NOTES

The palate is rich and luscious with a long velvety finish. The palate progresses from berries, cassis through cigar box and to chocolate, with a high "drink me" factor.

Deep dark crimson with a purple hue. Ripe berry fruit flavours of cherry, plum and mulberry, which are perfectly balanced with the underlying touch of toasty oak.

A fruit driven style of wine, showing typical Shiraz characters with wonderfully soft tannin structure.

The front palate has ripe berry flavours of cherries and plums with more intriguing touches of mocha, Chinese spices and toasted oak.

SOURCE

SOUTH AUSTRALIA

Trevor Jones has been handcrafting wines for many years. He began his winemaking career in 1977 and during his career, received the distinction of being awarded two PERFECT 100 POINT scores (never before awarded) for the Old Barossa Tokay and the Barossa Liqueur Shiraz Tawny from Robert Parker Jr. of The Wine Advocate in February 2000.

GWD have a lasting relationship with Trevor, and encourage him to craft wines specifically to suit our customer's tastes.

TECHNICAL

The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit flavour as possible.

Warm temperatures at the early stages of fermentation along with three days of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure.

Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with matured oak.
