TASTING NOTES
Dark cherry red. The nose is vintage Coonawarra Cabernet; there are splashes of fresh cherries, raspberry, chocolate and a lovely hint of tomato leaf. The palate displays an intense fresh fruit sweetness that is balanced by a round velvety mouth feel and a full body. This 2010 Cabernet Sauvignon is vibrant and approachable, and easy drinking for all occasions.

Select parcels of fruit were sourced from the iconic terra rossa soils of Coonawarra for this limited edition wine. We picked the fruit at optimum ripeness in the cool of the night in order to retain the fruits natural acidity and of course the regional flavours and aromatics that the Coonawarra is world famous for.

David Hart's Dragonfly series is quite different to the dragonflies painted by Pro Hart. David uses a plastic polymer as the background which has a shiny finish. He builds the insect with lots of levels of glazing which are rubbed away to allow light to emerge from the darkness. David uses shadowing to create the illusion that the dragonfly is floating on top of its canvas.
Regardless of the motivation behind the Dragonfly series and the continual evolution of style and technique, they will remain among the most identifiable of David Hart's work.
TECHNICAL
The wine was transferred to the winery where it was hand reared with extended time on skins. Hand plunging, cool preferment maceration and the use of select yeast, coupled with long post ferment maceration on skins followed the traditional techniques more often used in French winemaking. The wine was aged in French oak then select barrels were chosen for the final blend prior to bottling.
CELLARING: A wonderfully approachable wine upon release that will cellar well over the medium term.
