The palate is densely layered, displaying a textured, full-bodied profile packed with dark fruits and earthy depth. Notes of blackberry, dark cherry, and forest floor give way to a subtle, almost earthy character, evoking the essence of old-vine Shiraz. Sourced from a single vineyard from our oldest fruit on the vineyard located just outside the township of Heathcote bordering the O’Keefe Rail Trial. The vineyards aspect is northeast facing with a gentle sloping contour in the world renowned ancient Cambrian soils. Fruit was hand picked and de-stemmed prior to crushing and recieved extended fermentation with 50% whole punches for 30 days. We used a combination of new and old American and French oak to develop flavour in line with fruit concentration for an extending period of 36 months prior to 15 barrels being bottled then underwent further bottle aging prior to release.
